Vegetable Beef Soup...

About 1# lean beef, in 1/4 inch cubes...London broil is good
2 cans beef broth
1 can sweet green peas
1 can green baby limas
1 can whole kernal corn
1 can diced carrots or about 12 oz. fresh babies sliced
1/2 C dried mushrooms or 1 7 oz.can bits and pieces
1/2-3/4 C chopped onion
1 T butter
1 T worscestershire sauce
1 t granulated garlic
About 1 t bacon drippings
Sweet mesquite seasoning as needed
Olive oil as needed
JGM mix as needed (my mix...see JGM Mix)

In a large sauce pan or dutch oven, start with bacon drippings; add beef broth and all 
vegetables. Bring to slow boil. Season with JGM mix, worcestershire sauce and granulated 
garlic to taste.
Sautee onions in butter and olive oil and add to vegetable mix.
Brown beef in olive oil (seasoned with JGM mix and sweet mesquite seasoning); add to 
vegetable mix.
Simmer on low heat, just barely a boil...at least a hour or so. The longer the better.

Serve with buttered cornbread or biscuits. The "Jiffy" brand corn muffin mix is superb
done in a small cast iron skillet. Biscuits? Homemade if you're up to it; Pillsbury
canned if not.

NB: I've not tried it but I suspect once down to the long simmering, a slow cooker would
be great.
