(Twice) Baked Potatoes...Source: Jim Mixson

2 large baking potatoes (3/4 to 1 pound each)
8 ounces sour cream
1 C shredded cheddar cheese
2 T bacon bits
1/2 cup finely chopped onion
1 t basil leaves
1 t parsley flakes
1/2 t  rosemary leaves
1 t JGM mix #3...This is my concoction; see Recipe

Bake potatoes at 350 °F for 3/4 to 1 hour.  Test doneness with a toothpick.
Saute onions in butter while potatoes are baking.
When potatoes are done, remove and let sit for about 30 minutes.  Cut in half
lengthwise, then scoop insides into a mixing bowl.  Take care to not damage shells,
which are retained.
Break up potatoes well, then add all other ingredients.  Mix together well.
Spoon mixture into shell halves, heaping.
Rebake at 350 °F for about 20 minutes.
Serve hot.
Will serve 4.
