Stuffed Potatoes I...
Source: Jim Mixson Modification of a Sauder Quality Eggs recipe

3   T butter
8   oz. mushrooms, chopped fine
1 1/2 C finely chopped carrots
1   C chopped sweet red pepper (1 medium)
1/2 C finely chopped onion
1/4 t red pepper flakes
6   eggs
1/4 C plus 2 T milk
1/2 C shredded cheddar
1   t JGM mix...This is my concoction; see Recipe
1/2 t MSG
6   baking potatoes

Saute onion in 1 T butter.  Add remaining butter and stir in vegetables.
In another bowl, beat eggs with milk, JGM mix and red pepper flakes.
Move vegetables to one side of skillet and pour egg mixture into other 
side.  As eggs firm, mix with vegetables.
Bake potatoes.
Slit top of potatoes and squeeze, forcing cooked potato through slit.
Evenly divide above mixture and press into the potatoes.  Top with cheese.
