Shrimp With Tomatoes And Garlic...
Source: Unfortunately the original source has been lost. My recipe below makes considerable modificaion to the original. 1 T+ Olive oil 1 T butter 1 C chopped onion 4-6 cloves garlic, peeled and minced 1 C chopped pepper...green, banana, etc. 1 can diced tomatoes, undrained and finely chopped 1 t leaf thyme 1 t lemon juice 1 pound shrimp...can be pre-cooked or raw Old Bay seasoning JGM Mix 4+ (This is my concoction; see the recipe.) Coat the shrimp with olive oil and the Old Bay seasoning and let sit until ready to use. Heat olive oil and butter in a large skillet. Add the chopped onion and sauté until the onion is soft. Add the garlic and pepper, sauté another 5 minutes or so. Add the tomatoes, thyme, and JGM Mix. Simmer for 10 minutes or so. Add the shrimp. If the shrimp is pre-cooked, only allow them to come up to temperature. If they're raw, increase cooking time until they are pink and curled, about 5-7 minutes. Sprinkle the cooking mixture with the lemon juice and stir. Serve over steamed or boiled rice. Serves four.
