Chicken Stew...Source: Susan Mixson Cleveland
Boil one young chicken (not a fryer) along with diced onions, salt and pepper
Save 3-4 cups of broth and debone chicken
Cut pieces of chicken into small pieces and add to chicken broth
Add about 3-4 cups of tomato juice
Add one can of petite cut tomatoes
Dice 4-5 medium potatoes into small cubes.Add to broth.
Pour one large can of creamed corn along with 2 tablespoons of sugar
I also add 3 ears of fresh corn, cut off the co.
Bring to a boil, then let it cook slowly for 3-4 hours
Use a "potato smasher" or spatula to mash potatoes into stew
You will see the stew thicken as it cooks!
