Amazing Coconut Pie...Source: Sandy Warner





2 cups milk

¾ cup sugar

½ cup Biscuit Mix (Bisquick, etc.)

4 eggs

¼ cup butter or margarine

1 ½ tsps vanilla

1 cup coconut

 

Combine milk, sugar, biscuit mix, eggs, butter and vanilla 

in electric blender container.

Cover and blend on low speed for 3 minutes.  

Pour into greased 9-inch pie pan.  Let stand about 5 minutes, 

then sprinkle with coconut.

Bake at 350 degrees for about 40 minutes, or until pie is 

golden brown and center is set.

Serve warm or cool.



Note:   Although the recipe says to sprinkle the coconut on 

top, I blended the coconut with the other ingredients and it 

was just as good.   You can sprinkle a little coconut on top 

of the mix after you blend the cup of coconut in the mixture.
