Stuffed Potatoes II...

3   T butter
4   oz. mushrooms, chopped fine
3/4 C finely chopped carrots
1/2   C chopped sweet red pepper
1/2 C finely chopped onion
1/4 t red pepper flakes
3   eggs
1/4 C milk
1/2 C shredded cheddar
1   t JGM mix...This is my concoction; see Recipe
1/2 t MSG
6   baking potatoes

Saute onion in 1 T butter.  Add remaining butter and stir in vegetables.
In another bowl, beat eggs with milk, JGM mix, red pepper flakes and MSG
Move vegetables to one side of skillet and pour egg mixture into other 
side.  As eggs firm, mix with vegetables.
Bake potatoes.
Slit top of potatoes and squeeze, opening the slit.  Spoon out most of the
potato into a mixing bowl.  Add the cooked vegetable mix from above and
mix thoroughly.
Place the potato "shells" in a large baking dish (large enough
to hold all six potatoes).  Evenly divide the above mixture and spoon/press
into the potatoes.  Top with cheese.  Place in 350 degree oven long enough
to melt the cheese.
