(Southern) Pecan Pie

1 9 inch deep dish pie crust
3 eggs, slightly beaten
1 C brown sugar (may use granulated)
1 C Karo syrup (preferably dark; may use light)
2 T butter
1 t vanilla extract
1 1/4 cup pecans chopped (how fine is your choice)

Preheat oven to 350 °F. Stir eggs, sugar, butter and vanilla extract until well blended. Stir in pecans. Pour into pie crust shell and bake for 50-55 minutes (or until butter knife inserted halfway between center and edge comes out clean). Cool on wire rack. A note on the crust: For prepared frozen crust, do not thaw. Place on a preheated cookie sheet (not insulated).
