Pig's Stomach...Source: Lori Mixson

1 pig's stomach (procuring this will be a challenge)
7 medium potatoes, peeled and diced
1 medium onion, chopped
1 1/2# bulk pork sausage

Wash stomach thoroughly, inside and out.
Mix all ingredients and stuff stomach.
(You may season with salt and pepper or "JGM Mix", but, in
Pennsylvania Dutch fashion, it would be unseasoned (except for
sausage)).
Use toothpicks to hold together.
Bake in pre-heated 350 degree oven until brown and crispy,
probably 2 hours or more. (When top side is crisp, flip
a few minutes.to crisp the underside.)
