Chicken Caccictore...Source: Jim Mixson

This recipe works well with boneless chicken breasts or with thigh and drumstick
pieces.  Just remove the bone after cooking for the latter.

Chop 1 medium onion and cook in skillet with oil until tender.  Save aside in a 
large pot.
Add more oil, and cook about 1 1/2 - 2 pounds chicken for 15-20 minutes.
Season with salt and pepper to taste.
To the onions (above), add:
-  1/4 to 1/2 green pepper, chopped
-  4 ounces mushroom stems and pieces
-  15 ounce can tomato sauce
-  15 ounce can stewed tomatoes (original recipe with onions, peppers and celery)
-  1/2 T oregano or 1/2 T Italian seasoning
-  1 t garlic powder
-  1/2 t rosemary
-  2 bay leaves
-  1/4 C white wine
-  season to taste as desired
Add the chicken, cover and simmer for 30 minutes.
Reheat later for 10-15 minutes or simmer an additional 10-15 minutes (uncovered).
Serve hot over noodles.
