Banana Nut Bread....
Source: Jim Mixson (modified from a Food Network recipe)

2-4 (depending on size)overripe bananas
1 C sugar
1/2-3/4 C chopped pecans, chopped
2 C all purpose flour
1 1/2 t baking soda
1/2 t salt
1 1/2 sticks butter (3/4 C)
2 large eggs
1-1 1/2 t vanilla extract

Preheat oven to 350° F.
Mash all but one banana in a small mixing bowl, add sugar and mix in 
electric mixer at low to medium speed. A blended cream mix is desired.
Mix the flour, baking soda and salt in a larger bowl.
Melt butter in microwave oven.
Beat eggs, add vanilla extract and mix well.
Add the melted butter and the egg/extract to the banana/sugar blend in
the mixer. Allow to mix well.
Add the blended mixture to the dry ingredients, mixing in well.
Mash the remaining banana in a small bowl, mix in the pecans and then
mix well into the blended mixture.
Place in preheated oven for 1 1/4 hours.
As the end approaches, check for doneness with a butter knife inserted 
in the center. (Note...the top may crack; no problem.)
Remove from oven, allow to cool in pan for about 10 minutes. 
Remove from pan and cool on rack.
Serve dusted with confectioner's sugar and topped with vanilla ice
cream if desired.
