Apple Nut Bread....

1 1/4# apples (cored, peeled, chopped)
1 1/2 C sugar
3/4 C chopped pecans
2 C all purpose flour
1 1/2 t baking soda
1/2 t salt
1 1/2 sticks butter (3/4 C)
2 large eggs
1 1/2 t vanilla extract

In a sauce pan put 1/2 C sugar and the chopped apples. Cook until the apples are
mushy...can be mashed with a fork.
While the apples are cooking, mix the dry ingredients and set aside. Melt the 
butter in a microwave oven; set aside.  Beat eggs in a small bowl and add the extract.
When the apples are done, remove from heat and mash with fork. Retain 1/2 C of the
mashed apples and put the remainder in a mixer and add the remaining 1 C suger.
Mix until reasonably smooth...around 5 minutes. At the end, add the egg and extract
mixture.
To this mixture, blend in the dry mixture and the nuts. Lastly, blend in the
1/2 C of fork mashed fruit.
Place mixture in a 5 X 9 baking dish or pan coated with non-stick vegetable oil
spray and bake for 1 1/4 hours +/- in oven preheated to 300° F. As the end 
approaches, check for doneness with a butter knife inserted in the center. 
(Note...the top may crack; no problem.)
Remove from oven, allow to cool in pan for about 10 minutes. Remove from pan and
cool on rack.
