Apple Cobbler...Source:  Jim Mixson

Fruit filler
6 cups apples, peeled and sliced
1C granulated sugar
2T all purpose flour
1/2t ground cinnamon
1/4t ground nutmeg
1T lemon juic

Biscuit Topper
1C flour
2T granulated sugar
1 1/2t baking powder
1/4t salt
1 egg
1/4C milk, light cream or vanilla ice cream (evaporated milk works well)
1/4C butter

In a large sauce pan, combine 1 cup granulated sugar, 2 tablespoons flour, 1/2 teaspoon
ground cinnamon, 1/4 teaspoon nutmeg.  Stir in the 6 cups of peeled/sliced apples.  Cook
while stirring over medium heat, to boiling.  Cover and cook an additional 5 minutes or
until apples are almost tender.  Add 1 tablespoon lemon juice.  Set aside, keeping warm.

Thoroughly stir together 1 cup flour, 2 tablespoons granulated sugar, 1 1/2 teaspoons baking
powder and 1/4 teaspoon salt.  Melt 1/4 cup butter in microwave and cut into the mixture 
until it becomes coarse crumbs.  Combine beaten egg and cream and add to the dry mixture.
Stir in to moisten.

Pour hot fruit filling into a suitably sized baking or casserole dish.  Immediately spoon on
the biscuit topper in 8 or so mounds.  Bake at 400 °F about 20 minutes.
Serve warm with vanilla ice cream or whipped cream.  (See "Whipped Cream Substitute" recipe.)
