Pork With Apple/Beer Sauerkraut...Source: Jim Mixson (Modification of a base recipe by Emeril Lagasse.)

Boneless pork loin roast, about 9 pounds
7 oz. bacon, chopped
2 C red onion, julienned
1 T minced garlic clove
4 1/2 C cubed apples
1 bay leaf
1 t black pepper corns
1 t juniper berries, crushed
2# plus sauerkraut, rinsed
1T brown sugar
1t salt
1t pepper
36 oz. lager beer for 'kraut
Montreal steak seasoning
Olive oil
24 oz. lager beer for smoking pork

'Kraut preparation...
In a large pot, cook the bacon to crisp.
Add the red onion and garlic; cook to tender.  Add the apples and cook
until they soften.  Add the bay leaf, pepper corns, juniper berries, 
brown sugar, salt and pepper, sauerkraut and beer and bring to a boil.  Reduce heat 
and allow to simmer for 1 to 1 1/2 hours.

Pork preparation...
Dry pork with paper towel; coat with olive oil.
Season well with Montreal Steak Seasoning or your favorite.
In smoker water pan, put two 12 oz. cans lager beer and add water for 
remainder.
Cook on smoker to 165 degrees F.

Serve above with mashed potatoes.  Serves about 12.
