Sausage, Shrimp, Bean & Greens Soup...Source: Jim Mixson (with significant contribution by Kim, Greg, Stephanie) 3 Cans chicken broth 1 Can seasoned mustard greens 1 Can seasoned turnip greens 1 Can great northern beans 1 Can black eyed peas 1 Can diced tomato 12 oz chicken sausage, cubed (w/cheese, red bell pepper, garlic); cubed ½ lb. (approx.) andouille sausage; cubed 1 ½ C chopped onion 3 garlic cloves (smashed) ¼ C banana peppers, chopped fine 1 t liquid smoke (hickory) 1 t Italian seasoning JGM mix to taste (or salt & pepper) See my evolution of recipes at JGM Mix I use 4+. ¾ lb cooked shrimp, coated with olive oil and lightly seasoned with Old Bay; chopped 2 T butter Olive oil as required Saute sausage, onion and garlic in butter and olive oil. All other ingredients (except shrimp) in large soup pot; bring to low boil. Add sausage mixture and continue low boil until beans are tender. Add shrimp to mixture and let sit. Bring back to just boiling and serve with a crusty bread or toast. |
