Stuffed Pig's Stomach...Source: Lori Mixson
1 pig's stomach (cleaned)
3# ground sausage (see recipe)
3# potatos peeled and cubed (~1/4-1/2 inch)
1 C Chopped onion
1/3 cup chopped bananna peppers (optional)
6 fresh basil leave chopped with spine removed
1 T JGM mix (see recipe) (version 4+ is best)
NOTE: Scale sausage & potato amounts to size of stomach.

Thoroughly hand mix all ingredients.
Fully stuff the stomach and pin or tie closed.
Coat with olive oil and season exterior with JGM
mix.
Place in baking dish and place in oven at 325 xF
for 2 1/2 hours. Remove and baste with melted
butter. Place back in oven for another thirty
minutes.
Note: Depending on the size of the stomach, some adjustment to 
incredients may be required. Modify in the above approximate 
proportions.
