Clam Chowder.... Source: Jim Mixson 2 # potatos, chopped small 1 C onion, chopped fine 1 C carrot, chopped fine 2 strips bacon 5 t dried celery 2 t dried green peppers 28 oz can baby clams w/juice 1 t salt 2 t jgm mix (my concoction; see JGM Mix) 1 t black pepper 6 T all purpose flour 1 1/2 C milk In a large pot, cover potatos with water and cook until soft. Fry bacon until crisp; remove and retain drippings. Chop fine. Saute onion in bacon drippings. When almost done, add chopped carrots. When carrots are tender, add chopped bacon. Add the onion/carrot/bacon mixture to the soft cooked potatos. Add all spices, stirring well. Add milk and flour (+/- to desired consistency). Mix well to remove any flour lumps. Cook down at simmer |
