Soused Shrimp With Corn & Tomato...Source: Jim Mixson

Shrimp Mix...
1# medium to large shrimp, cooked, deveined, tailless
1 medium tomato, diced
1/4 medium orange, quartered
1 can whole kernel corn (15 1/4 oz,)
1 1/2 T finely chopped scallions
1 can chopped green chilies (4 oz.)
1 bay leaf
Old Bay seasoning
Butter as required
jgm mix to taste (This is my concoction; see the recipe.)

Sauce mix...
1/4 C lemon juice
1 t marjoram
1 t dill weed
2 T white vinegar
1 1/2 T sugar
1/4 C olive oil

In a deep skillet, cook corn (seasoned) in butter/olive oil mixture.
Coat shrimp with olive oil and season with Old Bay.
When corn is almost done, add all sauce ingredients.
When done add all shrimp mix ingredients.
Allow to simmer a few minutes until shrimp is heated through.
Serve after removing bay leaf and orange pieces.
