Black Bean With Ham Soup (A Slow Cooker Recipe) Source: Jim Mixson 1 C chopped onion 2 T butter 1 t granulated garlic 1 t thyme leaves 1/2 t ground cumin 1/4 t cayenne pepper Omit if you don't like the spicy "kick" 1 T red wine vinegar About 1 t olive oil 1 can chicken broth (14.5 oz.) 1 can diced tomatos 1 can (4 oz.) roasted green chillies, chopped fine 1 can whole kernal corn 2 cans black beans 8 oz smoked ham, chopped JGM mix (my concoction) as required. Substitute salt & pepper or other favorite seasoning to your taste Notes: Vegetable cans are "normal" 14-15 ounce size This recipe is sized to an approximate 3 1/2 quart cooker. Prewarm the slow cooker on high. Add the first 7 ingredients Drizzle with olive oil and stir Add 1 T JGM mix to start Add remaining ingredients and blend well Cook for 4 hours with slow cooker on high Actually tasty after two hours Reduce to low setting until ready to serve
