Tex-Mex Salisbury Steak #2 (Small Recipe).... Source: Jim Mixson, based on Lois Murphy's Tex-Mex Salisbury Steak Meat prep... 1/2 lb lean hamburger (90%) 1/4 lb ground pork sausage 1 small onion, chopped 1 egg 1/4-1/2 cup finely chopped dry breadcrumbs 1/4 cup mild salsa 1 T taco seasoning 1 T finely chopped green pepper 1 t JGM mix...This is my concoction; see Recipe 1 t dry cilantro olive oil Gravy prep... 5 T brown gravy mix 1 (14 1/2 ounce) can beef broth 1 (10 ounce) can diced tomatoes 1 T chopped green chiles 1 t dry cilantro Combine all meat prep ingredients. Shape mixture into 4 patties. Coat with olive oil and cook on grill (charcoal preferred). Whisk together gravy prep ingredients. Cook over medium heat until thickened (do not boil). Place grill cooked patties in skillet with olive oil, cover with gravy mixture and bring to low simmer. Great entré. Serve with black beans over rice. Note 1: The original recipe is to serve 6; this recipe easily serves 3-4. Note 2: Spiceyness can be notched up via more spicey salsa and/or chiles. Note 3: The above makes way too much gravy for the meat amount used. Package and freeze the remainder for next time.
