Shrimp Creole for 8....Source: Jim Mixson 3 # shrimp 1 t dry parsley 1 #2 can tomato paste 3 #2 1/2 cans tomato pieces (or stewed tomatos) 1 t black pepper 1/3 C peanut oil 2 T chicken base 6 oz mushrooms 1/2 t whole sage 1 onion 1 T paprika 1/2 T oregano 1 t salt 3 bell peppers 1/2 t thyme Finely cut onion, pepper and mushrooms julliene style. Saute in oil. Add crushed tomatos and puree. Add all other ingredients, bring to boil, reduce heat and simmer for about 20 minutes. Skim off any fat. Add shrimp and return to boil. Serve over steamed rice.
