Greg's Pinwheel Flank Steak...Source: Greg Mixson Flank steak Spinach Feta cheese Finely chopped red/green peppers Salt/pepper/JGM mix (See recipe via main page) Trim a fairly large piece of flank steak of excess fat. Place the steak between two layers of plastic wrap, and flatten with a meat hammer, working from the inside of the steak, out. (An empty wine bottle as a good hammer also, just be careful not to pound too hard). Once the steak is flattened to about 1/2 inch thick, season with salt, pepper, and JGM mix. Then cover the steak with a layer each of fresh spinach, feta cheese, and finely chopped red pepper. Roll into a "log". Cut the log into 1-2 inch thick steaks, holding them together with toothpicks and/or skewers. Grill until done as desired, about 5-10 min per side on hot grill.
