Hush Puppies (for a crowd)...Source: Jim Mixson 10 1/2C corn meal 1 1/2C flour 2 1/2t baking soda 2 1/2t salt 10t sugar (more to taste,depending on onion strength) 2C milk 8T lemon juice 1C water 1t black pepper 2C pureed onion 1/2t white pepper 8 eggs 1. Combine all dry ingredients; mix well. 2. Combine all other ingredients and add to dry mixture. 3. Mix all well. 4. Add water/flour/corn meal to adjust consistency to a paste. 5. Deep fry in oil between 350 and 400 degrees F. 6. Use a slightly heaping teaspoon to drop the batter into the oil. (15-18 puppies per cup of batter) 7. Enjoy hot when golden brown. NB: This recipe is enough for a BIG crowd! (Like a pig pickin'.)
