(German) Potato Salad... Source: Jim Mixson (Modified from a www.ichef.com recipe) 2# potatoes 1t salt 1/4t pepper 1t dry mustard 1/2t sugar 1/2t flour 1/2C water 1/2C vinegar (+/-) 1/4# bacon, sliced and chopped fine 1 medium onion, finely chopped 2 eggs, hard boiled and chopped Cook potatos, drain and peel, then dice while hot. Sprinkle with salt, pepper, mustard, sugar and flour. Place bacon in a skillet and fry until brown. Crumble. Add the onion and brown slightly. Heat water and vinegar to boiling. Mix all in a suitable saucepan, heating through. Serve warm.
