(Fried) Catfish....Source: Greg Mixson

2 1/2 to 3 pounds catfish filets
1 C cornmeal
1/2 C flour
3 t salt
1 t cayenne pepper
1/2 t garlic powder
olive oil
Seminole Swamp Seasoning (See favorite seasonings section)
 
Mix all ingredients through garlic powder thoroughly (except filets, of course).
Coat filets lightly with olive oil and sprinkle with Seminole Swamp Seasoning.
Coat filets well with the mix.  Deep fry in a single layer until flakey.
